2 Minute Microwave Frittata
2 large eggs
2 Tablespoons diced red or orange bell pepper
2 Tablespoons diced mushrooms
2 teaspoons crumbled goat cheese
½ teaspoon dried oregano
Salt and pepper, to taste
In a microwave-safe bowl (with at least a 2-cup capacity to allow for “puffing” of the frittata as it cooks), beat eggs and add remaining ingredients.
Microwave on high power 1 ½ minutes, then leave the frittata in the microwave an additional 30 seconds before opening the door and removing.
Serve immediately from the bowl.
