- 4 oz cooked chicken breast, chopped
- ¼ avocado, pit removed, peeled, mashed
- 1 tbsp mayonnaise (no sugar added)
- 1 tsp lime juice
- 1/8 tsp garlic powder
- Salt and pepper to taste
- 1 medium tomato, cored with inside scooped out
In a small bowl combine chicken, avocado, mayonnaise, lime juice, garlic powder and salt and pepper. Stir to combine.
Spoon mixture into tomato, packing chicken salad into tomato.
Plate and serve with knife and fork.
