Beanless Chili

Breakfast, Lunch or Dinner

Ingredients

  • 1 red pepper, diced
  • 1 small onion, diced
  • 1 small box of sliced mushrooms
  • 1 medium zucchini, diced
  • 1 pound of grass-fed beef or bison cubes
  • 1 teaspoon fresh garlic or equivalent (jar or dried works well, too)
  • 1 can tomato paste (6 oz.)
  • 1 can tomato sauce (8 oz.)
  • 1-1/2 fresh diced tomatoes (or one 14-1/2 oz. can)
  • 1 small can of green chilies (4 oz.)
  • 1-1/2 tablespoons chili powder mix
  • ½ cup beef broth (homemade is best)
  • Pinch of salt
  • Pinch of crushed dried red peppers
  • 1 teaspoon hot chili sauce
  • ½ teaspoon finely chopped jalapeño (optional)

Instructions

Place the meat cubes in the pot, then add vegetables and tomato sauce and paste. Mix all seasonings with the beef broth and pour evenly over the top of the vegetables. Cover and cook on low for 7-8 hours or on high for 4 hours.
