Cashew Bread



  • 1 cup raw cashew flour or butter
  • 5 eggs
  • 3/4 tsp salt
  • 1 tbsp apple cider vinegar
  • 1 tsp honey (optional)
  • 3/4 tsp baking soda


In a blender, or even a coffee grinder, grind the nuts until milled into flour, or buy commercial cashew butter, it works out both ways.

Add salt and baking soda and pulse a few times.

Add eggs and blend until smooth.

Add vinegar and honey and pulse a few times.

Pour into a greased and lined loaf tin (approximately 21 x 11 cm), or a bit smaller.

Bake at 350°F for approximately 35-45 minutes.

Savory option: Add one onion chopped, pan-fried in olive oil or butter until soft. Also add 1/2 cup of cubed feta and gruyere cheese, and 1 tbsp chopped, fresh dill.
