- 6 cloves crushed garlic
- 1 tsp kosher salt
- 1/4 c olive oil
- 2 1/2 lbs. broccoli, cut into spears
- 1/2 c mixed olives
- 1/2 lemon
Line baking sheet with parchment paper.
Combine garlic and 1/2 tsp salt. Using back of spoon, muddle garlic and salt until garlic begins to release oils. Let set 5-10 minutes. Stir in olive oil and set aside.
Prepare broccoli and place on prepared baking sheet. Pour garlic oil and olives over broccoli. Toss well.
Roast 20 to 25 min., tossing occasionally.
Serve sprinkled with olive oil and squeezed lemon juice.
