Durban Style Shrimp with Peppers & Mushrooms

Ingredients

½ teaspoon ground cumin

¼ teaspoon mild ground turmeric

¼ teaspoon ancho chili powder

1/8 teaspoon ground cinnamon

1/8 teaspoon ground cardamom

4 or 5 large fresh wild caught shrimp (about 4 ounces total)

½ cup orange bell pepper

½ cup sliced mushrooms

2 teaspoons coconut oil, divided

Purple lettuce and lemon wedge, for serving

Instructions

In a small bowl, combine all spices and stir; toss shrimp in spices in the bowl and set aside.

Heat a skillet over medium-high heat; add 1 teaspoon coconut oil, then sauté the pepper and mushrooms 5 minutes. Transfer to a serving plate.

In the same skillet, heat remaining 1 teaspoon coconut oil, then add seasoned shrimp, cooking 2-3 minutes per side until cooked through (do not overcook or shrimp will be tough).

Serve shrimp immediately with purple lettuce, vegetables and lemon wedge.
