- 2 tsp olive oil
- 2 slices eggplant approximately ½-inch thick each
- 4 oz ground grass fed beef, formed into round patty
- Lettuce, tomato slice, mustard, pickles, as desired
Brush eggplant slices on both sides with oil.
In a skillet over medium heat, cook eggplant slices 4 minutes per side.
Remove eggplant from pan, place on serving plate and set aside while you cook the burger.
Cook burger patty in same skillet as eggplant was cooked, cooking on each side 5 minutes, until cooked through.
To serve, top one eggplant slice with cooked burger patty, add lettuce, tomato slice, pickles as desired, top with the remaining eggplant slice and serve with mustard.
