Hazelnut Salmon

Serves: 2



  • 2 medium-sized salmon fillets
  • Drizzle of olive oil
  • 1/4 cup finely-crushed hazelnuts


Preheat oven to 350.

Pulse crushed hazelnuts in food processor, until you get a coarse consistency.

Brush tops of salmon fillets with olive oil.

Dredge tops of salmon fillets in hazelnut meal to form a crust. Drizzle olive oil in bottom of baking dish. Place salmon fillets side by each, encrusted side up.

Bake for 6 minutes, then turn the oven on broil and bake for another 2 minutes to slightly toast hazelnut crust.
