Paleo Oyster Chowder

Ingredients

  • ½ cup chopped carrot
  • ½ cup chopped onion
  • ½ cup chopped celery
  • 2 cups coconut cream or half & half
  • 1 pint fresh oysters (with liquid)
  • 2 tablespoons butter
  • 1 teaspoon celery salt
  • ⅛ teaspoon white pepper
  • ⅛ teaspoon paprika
  • 2 tablespoons potato starch

Instructions

In a sauce pan over medium heat, sauté onions, celery & carrots in butter for about 5 minutes, or until the carrots are almost cooked. Season onions, celery & carrots with celery salt, white pepper & paprika, stir to combine. Add oysters with liquid and cook until the edges of the oysters begin to curl.

Whisk together potato starch and half & half until blended smooth then add to your oysters & veggies. Reduce heat to low (almost simmering) and cook for about 5 minutes.

Garnish with several crispy fried oysters on the top of each bow.
