Chocolate Pudding Cups

Ingredients

  • 2½ cups of organic coconut milk
  • 3 tablespoons gelatin (use less for a softer pudding)
  • ⅓ cup organic coconut sugar (you can use stevia also)
  • ⅓ cup organic raw cacao
  • ⅛ teaspoon sea salt
  • ½ teaspoon vanilla

Instructions

Combine all ingredients in a sauce pan over low heat (you want to heat your pudding the least possible to retain as much good stuff in the raw cacao, while still melting the gelatin). Whisk/heat until everything is combined and smooth. Pour into individual jars, cover with lids and chill.
