Pumpkin Breakfast Pudding

¼ cup pumpkin purée

1 egg, lightly beaten

2 Tablespoons unsweetened coconut milk

2 Tablespoons chia seeds

1/2 tablespoon coconut oil, melted

1/8 teaspoon pumpkin pie spice

1/8 teaspoon salt

1 Tablespoon unsweetened toasted coconut flakes, optional topping

Natural stevia, to taste if desired


Combine all ingredients in a large microwave safe mug or bowl; whisk to blend.

Microwave on high power 1 minute; stir, then microwave 1 minute more.

Top with coconut, if desired. Cool slightly before serving.
