Rainbow Hummus Wraps

Ingredients

4 Tablespoons hummus

¼ cup diced red, yellow or orange bell pepper

¼ cup chopped dark leafy greens (kale, arugula, spinach)

¼ cup chopped water chestnuts

½ Tablespoon chopped fresh chives

½ Tablespoon fresh squeezed lemon juice

½ Tablespoon olive oil

Salt and pepper to taste

2 large Romaine lettuce leaves

Instructions

In a small bowl, combine pepper, greens, water chestnuts, chives, lemon juice oil and salt and pepper; stir to combine.

Spoon hummus into Romaine leaves, dividing evenly between the two.

Top with the vegetable herb mixture and serve immediately.
