Speedy Beef Chili

4 ounces ground grass fed beef

½ cup zucchini, diced

¼ cup onion, diced

1 clove garlic, peeled and minced

½ cup diced tomatoes (canned with liquid)

Salt and pepper to taste

Hot sauce, to taste, optional

Optional toppings: diced jalapeno peppers, 1 Tablespoon diced tomato, 1 Tablespoon salsa, cilantro, chopped onion, ¼ avocado or 1 Tablespoon guacamole, diced chile peppers


In a saucepan over medium high heat, brown meat with zucchini, onion and garlic until meat is cooked through and vegetables begin to become tender, about 10 minutes.

Add tomatoes, salt and pepper and hot sauce, if using.

Stir and cover saucepan, reduce heat to low and simmer 10 minutes.

Pour into a bowl, top with desired toppings and enjoy immediately.
